SHFM Supports the Military - February 2025

By Mike Johnston

We’re bringing SHFM to the Military with Patriotism, Service, Humility, and Hospitality.

In January and February of this year, four of our SHFM Members have traveled to 15 Military Bases on three continents, 8 with the USAF and 7 with the USMC. Airmen and Marines from the East Coast to the West Coast, to Hawaii, The Netherlands, Europe, and Asia, including Missile Sites in undisclosed locations, Field Mess Kitchens, Garrison Mess Halls, and Full -Service Dining Facilities, both large and small, very respectfully greeted our travelers.

Historically, and for many years, SHFM sponsored one traveler for the Hennessy Traveler Program for the US Air Force. In 2025, out of necessity and with little notice, two of our Past Presidents, Jim Wulforst and Tony Kaszuba, volunteered to assist the Air Force. Our traditional traveler for 2025, visiting 4 bases in Europe, was Kevin D’Onofrio. By request of the USMC, Mike Johnston once again took on the role of Base Evaluator for their Garrison and Field Mess Kitchens.
Although the experience is quite rewarding for the traveler, it’s the messaging that the traveler brings to the base, to the Airmen and the Marines of all ranks, regarding our industry and opportunities upon transition to civilian employment.

In the words of Jim Wulforst, “the experience for a civilian to travel with the military and participate in the evaluator process is extraordinary, but insignificant when you consider the value civilian evaluators bring to the table for the military. The program incentivizes the military staff to perform at peak levels knowing they have an opportunity to shine while in the presence of a food service dignitary AND POTENTIALLY lead to employment opportunities after a military career. At the same time those staff members tend to provide exceptional food before and after the evaluation process; and that by itself boosts morale for their peers on a day-to-day basis”.

You can hear about the exploits and experiences of these travelers firsthand by attending our SHFM Breakfast in Chicago during the NRA.
