Chinese Sausage and Snap Peas

Serves 2

1 Chinese Sausage, 1/4" sliced on a bias

2 large cloves of Garlic, thinly sliced

1 inch piece Fresh Ginger, thinly sliced

1/2 pound Snap Peas, trimmed

1/2 teaspoon Sesame Oil

Salt and White Pepper to taste

Steamed Rice for serving

Optional: soft scrambled egg, chili crisp

  1. In a large skillet, add the sausage to a cold pan and cook over medium heat until the sausage is lightly browned and the fat has rendered.
  2. Remove the sausage with a slotted spoon and leave the fat in the pan. Add the ginger and cook for 1 minute then add the garlic and snap peas. Stir fry for 2-3 minutes.
  3. Add the sausage back to the pan with the sesame oil, salt, and white pepper. Cook for 1 minute, remove the ginger, then serve over steamed rice with soft scrambled eggs and a drizzle of chili crisp.

*pro tip - add 1/2 a chinese sausage to the rice while it steams for extra flavor!
